Menu plan – Thursday 10 March 2011

Fastelavn (Danish carnival) has been and gone and all the gooey buns have been eaten!

We had a lovely glimpse of spring at the beginning of the week but today we’re back to grey skies and sleet, boo!  So I’ve planned a family favourite for Saturday night – flæskesteg – traditional Danish roast pork with crackling…mmm! 😀

Here’s the whole menu:

* krebinetter (Danish pork patties) with sugar snap peas and hasselbach potatoes

* pasta med kødsovs/pasta with meatsauce/spaghetti bolognese, veggie sticks on the side

* leftover pasta jazzed up with extra veggies, topped with cheese and baked in the oven

* herb-crusted salmon fillets with rice/sweetcorn (made in my rice cooker) and fresh spinach salad

* flæskesteg with baby potatoes, sovs (gravy), red cabbage and carrots

* homemade pizza with leftover veggies and bacon (which didn’t make it to the table last week)

* leftovers or madder (Danish open sandwiches)
